My mom did have a pretty awful experience canning chicken, though, which has kind of stained my ambition to some extent. I think there were a lot of factors to why that happened, but as a small kid, you pretty much just remember the shelves of putrid chicken AND your mother's horror. Looking back, I can only imagine how heartsick she was when that happened. I do like to can jams, jellies, pickles and really anything in a water bath. I don't actually have a pressure canner. <br /><br />Anyway, sorry to wander down memory lane! Your food looks wonderful. The biggest bit of advice, which I know you know, but still -- practice good sanitation and diligence in safety. The best books for learning are the Ball Blue Book and similar books.
