Filling Up

We've been eating a variety of things around here.  Mostly things I can grill, slow cook or pressure cook.  I've done the occasional baking though.

A Little Canning

 

 

We were given a huge box of fresh sweetcorn.  I canned 14 pints, gave the neighbors some, and had plenty to go with supper.  This should be really good this winter.

Onion French Bread

This is a super easy dish to make and quite economical.  Bell pepper, onion, ground turkey, taco type seasonings, and corn tortillas.  It calls for cheese added to the top, but my daughter in law consume much dairy without getting sick.  This was actually one of those dishes that was better the next day. 

 

Next time I cook it I will add salsa for a little extra moisture.
