Looks good. I use brown rice for my DD who has IBS. It is very starch. I find that I need to immediately add some marinara right after returning it to the pan after draining it off. It also acts like a sponge, absorbing alot of the sauce, esp. after being stored as leftovers. Did your casserole come out dry as a result? I would think that the egg and milk mixture would have made a difference.
The casserole wasn't dry. I think the addition of the egg and milk (with a little cheese) did the trick. The only dry/crispy edges were where I had a few sticking up on the edges that weren't covered with sauce. This was a hit. My brother in law took the leftovers with him.
