This bread is fabulous and inexpensive to bake. The biggest "expense" item is the stevia blend I use. I try to buy it on sale or shop for it in bulk online. I had two zucchini languishing in the refrigerator from another meal and all the ingredients except for the eggs came from my pantry supplies.
Whole Wheat, Oat and Zucchini Bread (serves 16 and has 110 calories per slice with 17 grams of carbohydrates and 3 grams of protein -- approximates)
Preheat oven to 350F. Grease an 8x4 pan and set aside.
In a small bowl combine:
1/4 cup of stevia baking blend
1/4 cup of stevia brown sugar blend
1/2 cup of unsweetened applesauce
1/2 cup of canola oil
4 egg whites OR 1/4 cup of egg beaters OR 2 whole eggs (the options will change the calories counts, etc. slightly, but each will work fine)
1 tsp. vanilla
In a large bowl combine:
1 cup of whole wheat flour
1 cup of old fashioned oats
2 tsps. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/8 tsp. nutmeg
Add wet ingredients to dry and stir well. Then stir in 2 cups of shredded zucchini.
Bake for 50 to 60 minutes or until done.
