Time is growing near for me to start back to school. My daughter's schedule is all over the place this semester. With me home for a few weeks (with no classes) it hasn't been hard to adjust, but when I get busier I want to be prepared for some quick meals.
Today I canned 6 pints of mixed beans -- a mixture of pinto, chickpea, and mayocoba.
I'll use these for quick beans and rice dishes, chili, Mexican themed dishes, and things of the sort.
