Southern New Year’s Day


I used the Instant Pot (electric pressure cooker) to prepare our New Year’s Day meal.
While Hoppin’ John is traditionally prepared together, those of you who read my chatter know that my daughter does not do well with certain foods.  As a result of this I often make dishes in separate pieces so everyone can have what works best for them.

I cooked my black eyed peas in home canned chicken stock with some of my dried red onion and dried bell pepper tossed in.
I added some rosemary to give it a little boost.
I like my peas soft and cooked them for 30 minutes.
If you like a little firmer, go with 20 minutes.

I transferred them to a soup tureen and put on my rice and greens.
I used kale this year.  Collards are more traditional, but I couldn’t find any that looked great to me.
I cooked these for 7 minutes on high pressure.

I pulled out bacon I had chopped and frozen to add ot the meal.
(While I do have a ham bone in the freezer, I am saving it for something specific to be shared soon.)

    1. You will really like it. I don’t know that it magically makes cooking easier, but for me the big advantage is that I can do other things while it is cooking. Ironically even though I love to cook I often feel like time is crunched or that I am missing out on things going on around me. Bonus —- for those of us who pull things out to cook at the last minute. This is the ultimate toss it in and see what kind of soup or casserole comes out.

  2. We love ours, I think we've used it everyday since we made our oatmeal. Including our black eyed peas yesterday and our breakfast this morning.

  3. I agree, it's being able to walk away that is the biggest advantage. The other day I cooked some white rice for 4 minutes, then was waiting for 10. Well, I forgot it for much longer than 10 to do the release, and it was just fine. I want to use mine more this year. I love the idea of the little inserts you have!

    1. I’m hoping they’ll be a game changer. I always felt like having to stop and either wash the pressure cooker liner or stand over the stove anyway to cook a second dish kind of defeated the purpose.
